Allergy Friendly Mickey Treats
As an allergy mom, I am always looking for ways to include my child in a safe and fun way. Our family trips to Disney are no exception! Every Disney lover has probably said that something tastes better when it’s Mickey shaped, and it is so true! Unfortunately for us, most of the treats in the glass cases and on the shelves just aren’t safe for my son, so this mama improvises! We always bring food and snacks on the trip with us so I take some time before hand to come up with a couple items with a touch of magic! Today I am going to share my super easy recipe for dairy, egg, peanut, tree nut and sesame free chocolate dipped cereal Mickey heads! I hope they can bring some joy to your family as they have to ours!
6 cups rice Chex
3 tablespoons vegan and nut free butter that is safe for you!
1 package safe marshmallows (we use Campfire brand)
1 cup safe chocolate chips (we use Enjoy Life or Divvies brand)
In large saucepan melt butter over low heat. Add marshmallows and stir until completely melted. Remove from heat.
Add rice chex cereal. Stir until well coated.
Press mixture into pan coated with allergy safe cooking spray (We use Chosen Foods avocado oil spray). Allow to cool.
While the cereal is cooling, put chocolate chips and 2 tablespoons water in a microwave safe bowl. Heat for 15 seconds at a time, stirring after each session, until the chocolate is melted.
Coat a large Mickey Mouse head shaped cookie cutter with safe cooking spray and cut out as many as you can!
Dip the ears and top of head in chocolate and allow to cool.
