One Pan Pork Tenderloin

I don’t know about you but in my house, the most dreaded chores is washing dishes. So when I stumbled upon one pan meals it was a game changer. Delicious meat and veggies with only one pan to clean? Yes please! And this recipe was definitely a crowd pleaser at my house because it was so simple to make and tastes amazing. So grab the ingredients the next time you are at the store and then you can thank me later!

One Pan Pork Tenderloin
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes
Serves: 4
Ingredients: 1 lemon garlic flavored pork tenderloin 2 cups of brussel sprouts 2 cups of baby potatoes 1 bunch of asparagus 6 tbsp of olive oil, divided 1 tbsp of garlic salt 1 tsp of black pepper 1 tsp of sea salt   Directions:
1) Preheat oven to 425 degrees, place rack in the center of the oven and line a baking pan with parchment paper.
2) Remove tenderloin from package and place in center of pan.
3) Rinse brussel sprouts, trim the edges and cut in half. Move brussel sprout halves to a mixing bowl.
4) Rinse asparagus. Either cut off or break off the ends (if you hold the asparagus in both hands and gently snap, they will snap at their “natural breaking point”). Discard the ends and add the tops to the bowl.
5) Drizzle half of the olive oil, all of the garlic salt and all of the black pepper over the veggies and gently combine. Spread veggies around the tenderloin.
6) Rinse the baby potatoes and cut in half. Put the halves in the bowl the veggies had been in, drizzle with the remaining olive oil and sea salt, combine and then place around tenderloin on the pan.
7) Bake for 40 minutes.
8) With a meat thermometer, check that the center of the pork has reached 145 degrees. Remove from oven and let rest 5 minutes before slicing and serving.
