Corn Salsa Recipe- Your Potluck Go-To!

This corn salsa is total crowd pleaser and with it being both healthy and flavorful, it’s easy to see why! This recipe is also versatile because it can be served as a dip with tortilla chips, as a side on Taco Night or even on it’s own as a salad, while still being super quick and easy to make. So by just keeping a few ingredients on hand, you’ll have a new potluck go-to that everyone will want the recipe for!

Start by mixing your canned ingredients and marinating them in Italian dressing, then everything else is just about enhancing the flavor! Want to add another layer of flavor and color? Use purple onion to give it that pop. Want it a little spicier? Chop up a jalapeno or two. (Pro tip: If you haven’t worked with jalapenos before, wear gloves so the pepper juice doesn’t get on your skin, in your nail beds or even worse, accidently rubbed in your eye.) Once you have gotten down the basic recipe, the possiblities are endless and I would love to hear how you put a twist on it!

Corn Salsa Recipe  
Prep Time: 10 minutes
Total Time: 10 minutes
Serving Size: 6 (when used as a side dish)  

Ingredients 1 can of corn (drained) 1 can of black beans (drained and lightly rinsed) 2 cans of Rotel 1 can of fire-roasted diced tomatoes 1 clove of garlic (crushed) 2 tbsp of cilantro (chopped) 1 cup of queso fresco (crumbled) 1 cup of Italian dressing

Optional: ½ of a small purple onion (chopped), 1 or 2 jalapenos (chopped), 1 small avocado (cubed), tortilla chips for dipping  

Instructions:
) Prep ingredients by chopping garlic, cilantro and any optional ingredients, and by draining the corn and draining and rinsing the black beans. 2) Add all ingredients except for the queso fresco into your serving dish and stir.
3) For optimal flavor, cover and let marinate in the fridge overnight. But you can also serve immediately if you are in a pinch.
4) Top with crumbled queso fresco before serving.
