Copycat Sleepy Hollow Sweet & Spicy Chicken Waffle Sandwich Recipe

In Liberty Square, there is a little snack shop tucked into the shadow of Cinderella’s Castle. Many people may not even realize it’s there, but for my family this place is a staple of every Disney World trip!

Sleepy Hollow offers up some delicious waffles including ones topped with egg and cheese, fruit and hazelnut spread and even the famous Mickey waffles. But for my family, it’s all about the Sweet & Spicy Chicken Waffle Sandwich! This fluffy waffle is topped with crispy fried chicken, creamy coleslaw and a deliciously sticky sauce with just a little kick and it’s definitely my hubby’s pick of Magic Kingdom meals!

So I set out to recreate this yummy treat and bring a bit of that magic home! I also wanted something that would be quick and easy for those busy school nights, so I chose to use mostly premade ingredients but you can definitely take this recipe and tweek it to your liking by making up fresh waffles and fried chicken. In the end the chicken and waffle choices don’t make a huge difference in this recipe as the real star of the show is the combination of tastes paired with the sauce!

Copycat Sleepy Hollow Sweet & Spicy
Chicken Waffle Sandwich Recipe  
Total time: 20 minutes (depending on your chicken choice)
Servings: 6  
Ingredients:
1 package of frozen chicken tenders (I prefer the Tyson Southern Style)
12 Eggos
1 package of shredded coleslaw mix
1 cup of coleslaw dressing
1 half stick of butter
1 tbsp of sriracha sauce
1 tbsp of orange juice
1 ¼ cup of maple syrup  
Directions:
1) Cook chicken tenders in the oven following the directions on the bag. 2) 5 minutes before the tenders are finished cooking, lay the Eggos flat on a cookie sheet and add them to the oven.
3) In a sauce pan, melt the half stick of butter and add the sriracha, orange juice and maple syrup. Mix well and cook down on medium-low. You want it to create a sauce but not boil, so it only needs about 5 minutes. 4) Remove chicken tenders from the oven once they are cooked, cut into halves and transfer to a large mixing bowl. Pour your sauce over top and stir to coat.
5) In a separate bowl, combine the coleslaw mix and coleslaw dressing. 6) Build your sandwich by putting an Eggo on the plate, top with 1 or 2 chicken pieces, top with desired amount of coleslaw (I did roughly a half cup per sandwich) and finish with a second Eggo.
7) Enjoy!
